As with all true gins, the taste explosion of Hooting Owl’s Signature Gin starts with juniper. Complemented by citrus notes of bitter orange and grapefruit, earthiness from mountain ash and the sweetness found in liquorice and cassia bark, our Signature Gin is finished with spicy notes of cubeb and grains of paradise. The result is a rich, aromatic, very smooth ‘ginny’ gin.

Our recipe is an old fashioned Juniper leading style, with additions of Coriander Seed and Liquorice Root twined with Angelica Root. Then the Rowan / Mountain Ash berries to add a drier mouthfeel.

The reason we use Rowan berries is because the distillery is based at a place called Barmby Moor House near Pocklington. In 1826, the local vicar used to go into York every Saturday night. He used to get the first coach back on a Sunday morning. He used to come back to Barmby moor house, which is where the distillery is. He'd have his breakfast and then he would have a few bevvies. Later he would go into the pulpit on Sunday morning and fall asleep. The locals held a bit of a petition and wrote to the Archbishop of York. They decided they send him off somewhere else, so they posted him to a place called Mountain Ash, which is in Glamorgan. It's little village that doesn't have a pub, so we use mountain ash buries in all our gins, just as a nod back to that. A little piece of history.

We also add bitter / Seville oranges, grains of paradise, Green Cardamom, Cubeb from West Africa followed by Dandelion and Burdock Root. (as a nod back to Dom's childhood. You find out more about this on our Gin evenings)

Kaffir lime leaves and finally cassia bark are also added, a bit like Cinnamon but not as spicy.

Fantastically peppery on the nose, with good levels of juniper, citrus and floral characters, along with hints of cardamom. Sweet and rounded on the palate, with really bright, fresh spices making their presence felt, followed by an intoxicating spiced finish which continues to linger on the palate with a bitter finish, presenting a rich, smooth complexity. Well balanced with continued evolving character and depth and a wealth of lingering, punchy flavour and a lasting botanical finish.
The taste explosion starts with Juniper, followed by the citrus notes of the bitter orange and grapefruit, the earthiness of the mountain ash all complimented by the sweetness of the liquorice and cassia bark with a spicy finish thanks to the cubeb and grains of paradise.

Juniper, Coriander Seeds, Bitter Orange Peel, Grapefruit Peel, Kafir Lime Leaves, Angelica Root, Orris Root, Liquorice, Grains of Paradise, Dandelion Root, Burdock Root and Mountain Ash.

Serve over ice with a slice of red grapefruit or orange for a fruit sensation. Alternatively, add a simple slice of cucumber for a refreshing clean taste. Serve with a high-quality Indian tonic.

Table 3: We were immediately enticed by this product's aroma: fantastically peppery on the nose, with what seemed to be hints of cardamom. The texture is a little on the thin side - we would have liked something creamier in this aspect - but the taste itself was very pleasant, with a lasting botanical finish and a cardamom-type flavour that also carried through when tonic was added (though not as much as one of our judges would have liked).

Table 4: The judges found the gin to have good levels of juniper, citrus and floral characters on the nose. A really high quality spirit with a clean, aromatic finish. A really classic, clean London Dry gin.
Table 1: Big on coriander in the glass, punchy and herbal. Sweet and rounded on the palate, with really bright, fresh spices making their presence felt. Long and complex on the finish with a wealth of lingering, punchy flavour. Brilliant with tonic, which gives a welcome citrus lift to the whole - this is just the most perfect gin and tonic base; somewhat unexpectedly to some tasters, but a delightful discovery. Coriander beaten into peaceful submission, but providing a firm background. Very clever.
Table 2: Earthy angelica notes on the nose. An interesting journey of bitterness and pepper notes with, hints of citrus and ever present earthy notes that finish with a rich sweetness. An intoxicating spiced finish continues to linger on the palate with a bitter finish, presenting a richness and smooth complexity . Well balanced and continued evolving character and depth. If bitter is your bag this is for you! With tonic these bitter notes are enhanced working in partnership to produce a formidable bitter tour de force.
